Lighter Spinach-Bacon Quiche
We've never quite understood how a cream, bacon, and cheese-filled custard surrounded by rich, buttery pastry found its way to the "lighter side" of the brunch menu. Quiche is certainly delicious, but it's far from dainty: That little wedge hovers around 600 calories and a day's worth of sat fat. With spring being the season of Easter and brunch, we felt it our duty to deliver a deliciously lighter French pastry.
