Brown rice

Pineapple refresher
Combine 3 cups pineapple chunks, 1 cup water, and 6 mint leaves in a blender; process until smooth. Transfer pineapple mixture to a pitcher. Add 2 cups cold water, stirring to combine. Serve over ice.

While rice cooks:
• Season chicken
• Combine slaw mixture
• Combine tomato and olives
• Toast pumpkinseed kernels

While chicken cooks:
